| 475 g | Heavy cream |
| 17 g | Instant tea |
| 9 g | Cinnamon |
| 6 g | Ground allspice |
| 6 g | Salt |
| 1 g | Cardamon |
| 6 g |
Invertase |
| Veliche Chocolat Lait 40% |
Combine salt with cream and heat until scalded. Whisk in tempered Veliche Chocolat Lait 34%. Add remaining ingredients and stir until consistent.
Pipe into pre-made chocolate shells made with Veliche Chocolat Lait 40%. Let center set up and then bottom with Veliche Chocolat Lait 40%.
Yield: Approximately 200 truffles (depends on mould size)
