1360 gVeliche Chocolat Lait 34%
475 gHeavy cream
17 gInstant tea
9 gCinnamon
6 gGround allspice
6 gSalt
1 gCardamon
6 g Invertase
Veliche Chocolat Lait 40%

Combine salt with cream and heat until scalded. Whisk in tempered Veliche Chocolat Lait 34%. Add remaining ingredients and stir until consistent.

Chai Truffle Grouping Pipe into pre-made chocolate shells made with Veliche Chocolat Lait 40%. Let center set up and then bottom with Veliche Chocolat Lait 40%.

Yield: Approximately 200 truffles (depends on mould size)
