Dark Chocolate banana XiaoLongBao Recipe by Pierre Gilson

I. Dark Xialongbao dough

  • Flour T45 490 g
  • Charcoal bamboo 10 g
  • Water 250 g
Process:

Prepare all ingredients. Mix all ingredients together and make an homogeneous dough. Leave to rest for at least 1 hour. When the dough is ready, divide it into small pieces. Lay it round. Put a piece of banana, some almond cream and chocolate. Shape it as xiaolong bao.

II. Almond Cream

Process:

Make a soft butter and mix it with your sugar. Add your eggs and almond powder. Chill.

III. White Chocolate ginger sauce

Process:

Boil milk, glucose and ginger together. Let infuse for 1 hour. After this hour, boil again and pour onto the chocolate with a siever.
